Sophie’s Mom –
Flavor is good, but it doesn’t melt! I used it on an open-faced egg sandwich and put it under the broiler for a couple minutes. It only got browned, not melty.

Great smoky flavor. The cheese is semi-soft to cut and creamy in the mouth. The smoke flavor is a nice contrast to the texture of the cheese.

I eat this cheese like an apple, biting straight from the block. The rind is the best part. Very creamy and smooth, tastes simillar to smoked gouda. Delicious!
