I love Eggplant Parmesan, but I’m too lazy to make it. So, I was excited to see that TJs had this dish and that it would only take six or seven minutes to heat in the microwave. Unfortunately, it was sort of a disappointment. Maybe if I had gone the “Conventional” route, and heated it in the oven for 45 minutes, it would have been better. It was just too soupy. That said, I would definitely make TJ’s Stacked Eggplant Parmesan again, but I would serve it on top of rice or quinoa, and add some garlic. (This would also be less calories–the dish is 460 calories if you eat the whole thing–something most people would do.) You could easily make three or four delicious side servings by adding some grain (or pasta).

I couldn’t even eat this garbage! The eggplant used had gone to seed, with tough skin and a odd strong tart/tangy taste (much like I’d imagine poison to taste). The slice of tomato on top was the hard end piece where the stem attaches. The tomato skin was too tough to chew as well. Too bad you can’t attach a picture here or I’d give you an eye full.

I’ve never had eggplant parmesan before and got this based on a review (along with several other selections from the same reviewer).
This was the last frozen meal left in my freezer and I was prepared to be grossed out by it (which is why it was the last one in my freezer) and I was pleasantly surprised by how delicious it was. Perfect blend of cheese, really tasty sauce and eggplant with a great firm yet tender texture (not mushy like I thought it’d be).
I’ll definitely buy this again if they continue it.

A tasty, thoroughly satisfying meal. I buy these six at a time, so I can always have one on nights I want a delicious treat. I have found it is worth the time it takes to prepare these in an oven rather than by microwave. Excellent flavor.

I kind reminder that this is a FROZEN MEAL! Honestly, I love this thing. If I have to pick a frozen meal for the week, this is it. Is it baked to perfection? No. But the combination of the cheese and the incredibly tasty sauce that makes it all worth it. Also, you cannot beat the $3 and some change

Love this eggplant cause it was not breaded. Great taste and sauce. I did add a little more mozzarella cheese to it. But now my Tallahassee, FL Trader Joe’s tells me it’s discontinued. Now I have no further reason to step foot in our Trader Joes.

This is outrageous. This was one of the best items that Trader Joe’s had. The layering of cheese and pesto was absolutely delicious. I understand that Trader Joe’s tries to rotate their products to make room for new ones and that products with lower sales are the first to go. But, judging by the outcry online across multiple platforms I really cannot believe that this product had such low sales that it warranted being discontinued. The only downside to the product was that there was some inconsistency in how the product was prepared. Hopefully, this discontinuation is temporary and is to address the quality control issues. The Stacked Eggplant Parmesan was a delicious, low-calorie, semi-healthy, meal option for people looking for a quick lunch or light dinner. PLEASE consider bringing this back ASAP. I have to echo the review above, I am finding fewer and fewer reasons to go into Trader Joe’s. Newer products seem more like novelties as opposed to trusted items that you cannot do without. I am not a fan of processed frozen foods, but the Stacked Eggplant Parm was an exception to the rule.

Can’t believe it’s been discontinued. Trader joes just came to our city, so I got to try it once, came back to buy 5 boxes to bring for work lunch and they told me it’s no longer offered. I hope whatever company was making this product for them comes forward and offers it under a different name….unfortunately Trader Joe’s probably has an agreement to keep their recipes only for their stores. It was very good though. I mainly came back to get the Eggplant Parmesan, ended up getting a few of the canned eggplants instead :/

The stacked eggplant parm being discontinued, along with some other Italian style frozen dinners is really disappointing. I am down to not being able to find any frozen dinners I like at TJs. Can’t for the life of me figure out why they would discontinue 5 different excellent Italian frozen dinners.

Don’t discontinue the eggplant parm! It’s so easy and so yummy ~ I buy it all the time! I recommend it my clients and friends!! Pickings in some cases are starting to get rather lean. Soon I won’t have a reason left to come to what was once my favorite place to shop!!

I don’t understand why this has been discontinued! This was frequently sold out at my store, so obviously it was very popular. This was my go-to lunch on days that I didn’t have the time or energy to put something together. I loved this meal and ate it at least once a week. BRING IT BACK!!!!

Okay, that’s it, I’ve absolutely had it! Starting today, I will be on an Eggplant strike until they bring this item back. That’s right, I will never have eggplant again for the rest of my life unless they bring this item back. Trader Joe decision makers, if you’re listening, please don’t let me go a long time without eggplant nutrients because I get very cranky without them. And think of the children for God’s sake!
