I really enjoyed this! I had it for lunch, heated up and served over some Bruschetta crackers. It was delicious! I think it would be incredible over some pasta also!

I had a little bit of this at lunch, mixed in with a salad. Seriously, there was no need for dressing. Tonight, I’m making feta and spinach chicken sausage, some steamed broccoli and tossing it in with some cooked pasta. Then, adding a few tablespoons of the Trader Joe’s eggplant and stirring it through. Thinking it will be amazing!

Made awesome baked chicken Parmesan; sauteed boneless/skinless chicken thighs on a bed of linguine, topped with Grecian style eggplant, mozzarella cheese, & a homemade sauce using canned TJ marinara as a base. So yummy!

Step 2) Slather some butter on it
Step 3) Sprinkle with granulated garlic
Step 4) Heat up desired amount of eggplant and put on toast

My favorite food along side with TJ’s Dolmas. All I need to be happy is a fork! When I am serving the egglpant I place ontop of brown rice. Sooo yummy!!!!!

I use one can with a pound of TJ’s whole wheat pasta and toss on some extra sauteed tomatoes and onions. In my house its gone in no time.

Living In Beauty: Greek Pasta Salad Recipe:
2 cups raw quinoa penne pasta
2 cups roasted tomatoes (quarter, salt, and drizzle with olive oil and roast for 50 minutes)
1 can hearts of palm, rough chopped
½ cup sliced olives
½ cup feta, cubed small
1 cup red, yellow and orange peppers, chopped small
1 can Trader Joes Grecian Style Eggplant with tomatoes and onions
Grated pecorino-romano for garnish
Cook the pasta and rinse in cool water. When the pasta is completely dry, toss in all ingredients. Sprinkle with grated cheese and serve.

Authentic! Very delicious. When we do Russian kabobs we also grill eggplant, tomato and clean and mix it up to make a chunky middle eastern side dish. This tastes almost like the real deal. These paired with some dolmas and chicken is great for dinner.

I LOVE this! I toasted a slice of my husband’s homemade bread, put a schmear of hummus on it, dolloped some of this eggplant dish, and ate it for lunch. Flavorful and filling! A new favorite of mine.

I am in live with this eggplant! It is slightly smoky and perfect for pairing with chicken. I smoosh it into rice, scoop it with bread, crackers, or veggies. Ive even used it in place of tomato sauce on pizza. I don’t know what I’d do if this was discontinued!

I love this stuff. Usually on a toasted baguette, which is unbelievably good.
Today I opened the can and decided to try it on pasta. Maybe add some black olives.
Maybe add sundried tomatoes….. Who knows? But I do know it will be delicious.

This eggplant should be removed from the shelves. It is way too oily and consists of mushy vegetables.

If they used good quality olive oil in the egg plant chick peas and beans I would give it a 5 star. The taste is wonderful but I won’t buy it anymore because they use unhealthy oils. I’m sure if they used olive oil and charged a little more, more people would buy it
