This was absolutely fabulous spread on the Gingerbread Crisps. I almost couldn’t stop eating!
We managed to save enough to have again, only next time we’ll add a little lemon curd.

TJ had it as their tasting sample the other day when I was in Bellingham on their Triple Ginger Cookie Thins & holy bananas was it amazing!! Does anyone know how long will the cheese last in the fridge? I was hoping to save it for Christmas as a dessert treat, if I can last that long.

I live 25 miles to the closest Trader Joe’s .I visit about 1 time a mo. To stock up on my favorite cheeses wines etc,Last month I noticed the Baked lemon ricotta cheese and since I’m a lover of all things lemon and cheeses I took it home and was immediately addicted went back a week later bought 2 more unfortunately yesterday I went back to buy more was told it was out and only a seasonal item until NOVEMBER I was so upset because I truly felt hopeless so now I’m scouring the internet to a try to make my own to me it tastes better than lemon cheesecake my favorite! But without the added sugar and carbs

I first saw it mentioned on line. I was so happy when they had it for Easter, I really wanted to try it. However, now I’m in love with it. I tried the Triple Ginger cookies with it slathered on top. OMG, I am so sad that I have to wait for Christmas to eat this again. Seriously the best thing I ever ate and I’m a pretty good cook.

Love it. When TJs is out of this seasonal product, I bake my own lemon ricotta cheese. But then I eat too much of it, so I prefer the small size of this store bought, just to keep my gluttony at bay. If it’s in my house, it’s all I eat until it’s gone!
