A chewy chocolate cake with creamy peanut butter frosting – both gluten-free.

Ingredients:

CAKE MIX: SUGAR, RICE FLOUR, SEMISWEET CHOCOLATE CHUNKS (SUGAR, UNSWEETENED CHOCOLATE, COCOA BUTTER, SOY LECITHIN (EMULSIFIER), NATURAL VANILLA FLAVOR, COCOA POWDER PROCESSED WITH ALKALI, TAPIOCA STARCH, NON-FAT MILK POWDER, BAKING POWDER (SODIUM ACID PYROPHOSPHATE, SODIUM BICARBONATE, CORNSTARCH, MONOCALCIUM PHOSPHATE), CANOLA OIL, SALT, NATURAL VANILLA FLAVOR

    The texture is amazing! Think of mochi but much more decadent. Pairing the cake with the peanut butter frosting works but the frosting is a bit on the sweet side for me. But overall YES! It’s the desert I didn’t know I needed 🙂

    This was easy to make and fun to eat! A little also goes a long way, and I didn’t add the frosting because most people I know who tried it said it was too sweet and that it was better without it. I made a mostly vegan version (the mix itself has some milk powder in it, but I used dairy-free butter and flax eggs) and it came out really well. Basically like a mochi brownie. Very mochi-like texture, and as long as you got a piece with a good amount of the chocolate chips in it, pretty chocolatey!

    I had to bake it for about 10 minutes longer than the box said, but maybe that was because of the alternative butter/egg stuff I used in mine. Either way, I would keep an eye on it and test it with a fork before assuming it’s done. (I guess that’s just the standard for baking anyway, but especially relevant here!)

    I was so excited to try this cake but it was horrible! We didn’t like the taste of the chocolate or the fact that there were large rock salt crystals in it. I mixed it thoroughly in a stand mixer but still noticed hard chunks in the cake batter. I figured it was chocolate pieces but no, it was salt! Who wants to bite down on hard salt chunks in a cake?! This cake was a total disappointment. We tossed it in the trash.

    Love this cake mix . The texture reminded me of some glutinous rice desserts in Asia.
    I made this mochi cake during the holidays with a peppermint buttercream frosting. YUM!

    I am a big fan of Trader Joe’s yellow mochi cake mixes. But this chocolate one had way too much salt in both the frosting and in the cake mix. Big thumbs down.

    Frosting didn’t mix well. It was really crumbly so we added more butter. Very disappointing.

    You’d think the peanut butter wouldn’t work with it but it’s great! And it’s gluten free which I don’t usually put great and gluten free together.

    Here is how I doctored it up!
    After reading the reviews about the too sweet icing – I knew how to fix it. I replaced the butter with one bar of regular full fat Philadelphia Cream cheese at room temperature and mixed it with only one half of the peanut butter frosting packet. Then I added one heaping tablespoon of natural peanut butter and a couple of drops of pure vanilla extract. It was perfect.

    ! I added one smushed banana to the mix and blended the batter in my ninja blender. I also used coffee instead of the water and added one tsp of pure vanilla extra.
