These are awesome. I am trying to find a way to use the vinaigrette because it is pretty awesome. Definitely going to be a staple in my pantry.

Best pickled beets I’ve ever had. Our favorite use: in a salad of the beets, walnuts, feta cheese, and apple tossed with spring greens or baby romaine. Delicious! I save the juice and use it as salad dressing (mixed with a bit of balsamic vinegar), and when I make cole slaw. I get raves every time. Wonderful!
