i shop only at TJ 72 and Boadway, NYC. also available, cheddar that is 5 years old. also from Canada. Province unstated (could only be Ontario or Quebec) . stock comes and goes—they have it for a month, then it disappears for another month. such a drag. this is the real stuff—crumbly, sharp, not too creamy, good size chunk makes it easy to use a cheese plane for very thin protions that will release the sharpness only a very old cheddar can contain. cheaper than in Canada itself, where it is very expensive, out west, at least.
i would not buy any cheddar less than 5 years old becasue- it is ‘ne plus ultra’. i’d rather go without when 5 year old is not available.
