This a nice proper cheese! Actually from Spain. Quite intense if you let it warm up to room temp!

I had bought Iberico from Costco because it was made from unpasteurized milk. When I saw it at Trader Joe’s, I was about to buy it, but, confusingly found it was made from pasteurized milk. I skipped it. I came back to Costco and see it says Gran Reserva before the name. Just beware–these are NOT the same product! I’m holding out for the raw cheese!
