I live at 7000 feet. There were no altitude adjustments listed in the instructions. I made it as instructed. The only adjustment I made was to use two loaf pans. It was delicious!

I used this mix to make a summer wedding cake. Used TJ lemon curd between layers and iced it with a buttercream and marshmallow cream icing and fresh flowers. The guests absolutely adored it!!!

I tried this cake twice, just to be sure. Both times I followed the directions faithfully. Both times it was as heavy as lead. I tested my oven to make sure it wasn’t at fault and it baked everything else just fine. One day they were giving samples of it at the store, and while theirs was somewhat less heavy, they cooked it in a square baking pan and advised me not to use the loaf one recommended on the box. Most of TJ’s mixes are very good, but I have no luck with this one and do not understand why everyone else who makes it, loves it. Could it be my location? I do not live in high altitude.

I made 2 cakes yesterday. I followed the directions, but added 1 cup of floured fresh blueberries to the batter. I had to bake it a little longer, but it was worth it. We dove into one and my family loved it. I used fresh lemon juice in the glaze mix with some water to thin it out.
Has anybody tried to substitute 1/4 cup of applesauce to 1/4 cup of melted butter?
I was just wondering how that would work to lighten the calories. I am wondering if Trader Joe’s has test kitchens that have tried this. Thank you for a great product.

I baked this lemon cake in an 8X8 pan because loaf pans have a tendency to bake unevenly. It was delicious! It looked attractive served in squares with the icing dribbled on top. Great texture and flavor. Went to buy some more at our Bellingham store but none on the shelf. Hope it will be stocked again.

This is not your average lemon cake mix. This cake has the density of a pound cake. It is very moist and frosting helps to complete it. If you are looking to bake a pound cake, this box mix is a wonderful substitute for a cake from scratch. I love serving it with fresh sliced strawberries. The family and friends love it.

Fabulous. I used an 8 x 8 Pyrex square and served cut in cubes.
I used olive oil and added organic lemon zest, grated.
I used lemon juice in the icing and more grated zest

This loaf cake mix fell 5 minutes after I got it out of the oven. It doesn’t bake up like the picture on the box. Don’t buy it. Also, it doesn’t taste good. It seems to be missing salt. I don’t know if it’s just me — there is one other bad review so I know I’m not the the only one that this happened to. The product code for this batch is Best Buy 08/31/24 code DX3063G 1554 and the SKU is 57088 UPC 00570886.
