First it is a sourdough bread, without the taste of typical sourdough in US. Closest to the European bread you can buy in California. Yes I did noticed a change in texture, but it doesn’t bother me. It’s still the best bread you can buy.

Pain Pauline is large and I often have extra which I dry and use for stuffing later. I cut it up and add celery, onions, a cut up apple or hard pear, sage, a little cumin, some raisins, and toasted pine nuts, and broth, and roast it under a turkey thigh or in a turkey. I am very happy with it. I used to use Acme Levan but the lines got too long, the parking too difficult, and I hardly notice the difference.

I read online that TJ’s is using a different bakery who is no longer making this with the same recipe. If this is true, I’m so disappointed. I can’t have yeast and this bread was one of the best sourdough varieties I have found. Now, it looks like there is all kinds of stuff in there, including yeast! I am going to check my local store and verify that this is the case. If it is, I’m going to come back here and beg TJ’s to go back to the old recipe!

Been buying this bread for years. Up until inflation, it was all organic with the ingredients being “organic whole wheat flour, water, and salt). Then when the inflation hit, the bread disappeared for a couple of months and then reappeared in its current form. Not organic. Not all whole wheat. Not the same taste.
The price remained the same due to Trader Joes’s version of “shrinkflation” with lesser quality ingredients while keeping the price the same.
If you are listening TJ, please bring the organic version back again even if it may cost more.

Does Trader Joe’s still sell Pain Pauline? I used to buy it all the time when I lived in the Bay Area but I’m not able to find it in San Diego.

They may advertise this bread as fresh, but it won’t taste fresh when you buy it — instead, it will taste like it WAS fresh two days ago. Add on to that the fact that they don’t slice it, and sorry, the thing is losing some points for sure. The bread is pretty difficult to slice, you either end up with a sheet of paper or something too thick to put in your toaster. But this thing is such an absolute unit that you’ll be lucky if you don’t get both options in the same damn slice! At least the flavor is pretty unique, but I didn’t find it mind-blowing. If you want a no-fuss bread this is not for you.
