    Our family loves coconuts & pancakes! We make these most Sunday mornings. They are easy to mix, flavorful and can easily be changed up with the addition of chocolate chips, flaxseed, bananas, blueberries, etc.. (I sure miss the gingerbread version of the mix though!)
